
So delicious you won't miss the traditional version
We've made this fit quiche in a vegetarian version with zucchini, spinach, and onion, but for meat lovers, you can try and experiment by adding chicken or turkey breast.
The base of our fit quiche is made from whole wheat flour and neutral-flavored Gourmet Oat Flour. Oats are a complete and nutritious food that helps keep you full thanks to their carbohydrates and fiber, which helps slow down absorption. That's why you won't be hungry with this quiche.

Ingredients for a 6-serving fit quiche:
- 130 g of neutral-flavored Gourmet Oat Flour
- 115 g of Whole Wheat Flour
- 30 g of Extra Virgin Olive Oil
- 3 Eggs
- 200 g of Ricotta Cheese
- 200 g of Zucchini
- 80 g of Spinach
- 50 g of Onion
- Grated Mozzarella
- Salt, pepper, and water

Preparation:
- Mix the Gourmet Oat Flour with the whole wheat flour and a pinch of salt and pepper to taste.
- Add 30 g of olive oil and 150 ml of water and whisk everything.
- Grease the mold and spread the dough we made from the flours into the mold as shown in the video.
- Bake for 20 min. at 180ºC
- Separately, mix 3 eggs, 5 g of baking powder, salt, pepper, and 200 g of ricotta cheese and whisk.
- Cut 200 g of zucchini and 50 g of onion and grill them.
- Add the zucchini, onion, and 80 g of fresh spinach, and a little mozzarella to the previous mixture.
- Add all the mixture to the mold with the already baked quiche base, and bake again for 45 min at 160ºC.
